		<description>You can use a pressure cooker for pressure canning, but the cooker must achieve 10 lbs of pressure at altitudes up to 2,000 feet to kill clostridium botulinum. For altitudes about 2,000 feet, the pressure cooker needs to achieve 15 lbs of pressure. I encourage you to contact the manufacturer of your pressure cooker to learn whether they can provide guidelines for canning with it. Oh, and find a canning rack that will keep jars off the bottom of the cooker during processing.</description>
