My wife and I just finished making raspberry jam from our backyard raspberry patch. I candied the raspberry foam by dropping teaspoons of foam onto sugar then covering with more sugar. I rolled them around a bit with a fork then scooped them out and put them on a baking sheet covered with wax paper. They're cooling in the freezer now.

We also have 10+ pounds of blueberries in the freezer that I picked at a local farm today. (Only a mile away from our house.) If the blueberry foam tastes as good as the raspberry, I'll try candying it as well.
